 This teppanyaki style of cooking involves cooking meat, vegetables, seafoods, and the like on top of an iron hot plate called a "teppan". 料理人がカウンターに立ち、客の目の前で食材を焼くスタイルは、海外でもおなじみ。料理人の華麗な技や、豪快に上がる炎も楽しみの一つです。
このスタイルは神戸のステーキ専門店が始めたといわれ、「紅花」が1964年にニューヨークに出店して以来、外国人の注目を集めました。
この鉄板焼きスタイルは、そもそも＂鉄板＂と呼ばれる鉄の板の上で肉や野菜、魚介類などを焼いて食べる料理のこと。
お好み焼きなど、庶民的な鉄板焼きもありますが、高級なレストランではステーキを提供するのが一般的で、ブランド和牛や伊勢エビ、あわびなどの高級食材が使用されます。
